Gelling without cooking



Natural, fruity, raw food - With our gelling aid fruit spreads succeed completely without cooking and with reduced sugar content.

Still to add: 500g fruit or 400ml fruit juice, 1/2 tsp citric acid #110, sugar as needed. 

Preparation:

  1. Mix gelling powder with citric acid and fruit juice or fruit, except for half a tsp.
  2. Fruit juice: Mix the mixture for 4 min. on lowest speed with a hand mixer. Fruit: Blend the mixture for 4 min. with a hand blender.
  3. If the mixture is not yet firm enough, add the remaining amount of gelling powder and mix or puree again.

Tip: Pour fruit spread into boiled jars, store in a cool place and use within a few days. 

Ingredients: Baobab powder*, guar gum*, pectin.
