Agar Agar
Our agar agar is a purely vegetable gelling agent that has particularly good gelling power. It is tasteless and can therefore be used without hesitation for both sweet and savory.
Dosage: One packet of agar agar gels 500ml of liquid and is equivalent to about 6 sheets of gelatin.
Preparation:
- Mix one packet of agar agar in 100ml of cold liquid.
- Heat remaining liquid and stir in mixture.
- Simmer gently for two minutes.
- Allow to gel in the refrigerator for three hours.
Tip: Place the liquid in the refrigerator, as the gelling process does not begin until chilled. Also: if agar agar is used for desserts, prepare them no more than half a day in advance, as they will quickly draw water.
